I'm located in Seattle...where we have relatively clean water. I honestly don't mind drinking tap really, but just want to take the extra precautionary/peace of mind (if that's what you want to call it) for a filter system.
I don't know if I should spend $250 for a Reverse Osmosis system or just a standard 2-stage filter. What should I get? $150 for the 2-stage filter kit and $250 for the RO. Both are by GE.

I would say the first step is to have your water tested. You have two options: 1) Buy home test kits and do the test yourself. You can find home test kits that can test for multiple parameters; you can also find some that can test for individual contaminants. 2) You can hire a state certified lab to do the test for you.
This way you will know for sure if you need a water filter. I will advise that you do not buy a filter if your water is clean. Tap water can be better than bottled water. Unless your plumbing system is old, or you are concern that your water supply may not be removing those chemicals of concern.
